2021 Estate Shiraz Cabernet Sauvignon

VARIETY This classic Australian blend has a long and illustrious history here at Huntington - we've had some trophy winners in our time. Cabernet provides structure, line and length while the Shiraz smoothes, softens and fills out the mid-palate, creating a wine of superb balance. We are very committed to this blend and will be regularly releasing. We can barely keep up with demand for these Estate range Cabernet / Shiraz blends.

WINEMAKING Four parcels of fruit were hand selected from across the vineyard to create this stunning blend. Fruit parcels were pulled from the reserve grade shiraz and cabernet sauvignon, to truly represent the Huntington style – fantastic for early drinking, with the structure to support cellaring as well. Shiraz from Blocks 18 & 10 makes the backbone (50%) of the blend, with 15% of the shiraz from premium Block 1. Cabernet Sauvignon from our next-door neighbour McIntosh Estate, and Huntington Estate premium Block 9B make up the remaining 35%. Reserve grade fruit from Block 1 shiraz and Block 9B cabernet underwent cold soak on skins to support aroma and depth of colour, before blending into 10% new French and American barriques. After 17 months on oak, the wine was blended and then bottled on the 05/10/2022 at 14% alc.

IN NOSE Blackberry pie – toasted warmth with rich red and black fruit notes. Distinctly peppery with herbaceous dryness.

IN MOUTH Intense red fruit to the fore, underlaid with brambles and hints of cypress pine smoke. The midpalate is more about spice, with pepper berry and rosemary woodiness. A medium to heavy bodied red that sits almost delicately on the palate. Beautiful, soft, and well-rounded tannins lead into a clean, vibrant, fruit-led finish that lingers in the mouth.
