2021 Huntington Estate Special Reserve Semillon

Clean, bright, and pure

VARIETY This is the 6th release of our Special Reserve Semillon. It’s a palate-driven wine-style I love to drink, and I’m really enjoying experimenting with different winemaking techniques and learning about what our fruit can do. 

WINEMAKING Picked 11/2 from Blocks 5 & 6 at 10.6 Bé. Only free run juice used, allowing us to maintain and exhibit the stunning natural acids and fruit characters. Cold fermented for 9 days, to allow the high quality of the fruit to shine. Bottled 15/6 at 11.3% alc.  

IN GLASS Nice pale straw yellow, emerald tints.

IN NOSE Green apple, limes, a hint of white lily – pure and clean.

IN MOUTH Leading characters of citrus and juicy lime soften into a rounded, mouth-filling sweet green apple. Refreshing, mouth-watering acids. At only one year in bottle, mead and honey richness are already starting to come through. Excellent, soft yet driven finish – almost like a lemon curd.

DRINK WITH Roasted chicken with duck fat potatoes.
