2018 Huntington Estate Cabernet Sauvignon

Vibrant, spicy but smooth.

VINTAGE A great vintage.  Good rains during last winter ensured a full soil moisture profile. Consistent weather until late Summer also helped the vines gain strength to settle for a couple of hot spells just before ripening which was marked by ideal dry conditions.

VARIETY Huntington’s reputation was built on Cabernet Sauvignon. Two Blocks were planted at opposite ends of the vineyard in 1969, one (Block 3) at the highest point, the other (Block 9) at the lowest. The terroir (climate, soils) and winemaking at Huntington is perfect for this late-ripening, tannic grape.

VINEYARD / WINEMAKING A varietal, punchy Cabernet from a warm season. Fruit from Block XX was picked on YY at ZZ Be. On skins, fermenting until 23/3 when pressed off to tank, then racked to well seasoned barriques (American) 20/4. Bottled November 8th 2019 at 13.7% Alc.

IN NOSE Vibrant and fresh red and black cherries and cranberries to the fore. Supporting notes of butterscotch, dusty clove and fresh cedar.

IN MOUTH Red and black cherries, red currants, dark chocolate, white pepper and clove. Very smooth with well-rounded and fine tannins, cut through with a vibrancy and freshness driven by its natural acidity. Great length.

CELLAR 2040+ A keeper! The vibrancy and level of fruit, suggest this wine will have a very long life. I can't wait to try it in another 10 years.

DRINK WITH In its youth, drink with pork belly or duck. As it ages, with any red meat.
