2017 Huntington Estate Cabernet Sauvignon
VINTAGE 2017 was a great red vintage, and the culmination of a huge amount of hard work understanding how to manage the warmer seasons in the vineyard and winery. The promise of the wines was evident from the start with colour and chemistry (pH, acids etc), and the flavours and structure followed through.
VARIETY Huntington’s reputation was built on Cabernet Sauvignon. Two Blocks were planted at opposite ends of the vineyard in 1969, one (Block 3) at the highest point, the other (Block 9) at the lowest. The terroir (climate, soils) and winemaking at Huntington is perfect for this late-ripening, tannic grape.
VINEYARD / WINEMAKING Fruit from Block 9a was fermented for 20 days, racked to barrel for 11 months (90% French Oak, mostly second / third use barriques). Block 9a was picked 10/3/17 at 13.1be. Standard fermentation for 20 days and racked to barrel for 11 month, (90% French mostly second/third vintage oak). Bottled 16/8/18 at 13.4% alc/vol.
IN NOSE Crushed herbs, blackcurrant, cedar and fennel.
IN MOUTH Elegant and restrained, varietal characters are to the fore. Appealing black and red fruit supported by herbaceous, leafy notes and white tea. Soft in the mouth with a firm finish.

DRINK WITH Roast lamb
90/100 "Dark cocoa is met with blackberry and bramble on the nose. The wine is medium bodied with blackberry etched with tomato leaf and a flowing line of both tannin and acidity. Blackberry is taut, with graphite and bitter dark chocolate to finish. Will be sure to grow in the bottle." THE WINE REVIEWER 2021
