VINTAGE 2016 was one of those vintages where everything falls into place – the weather, the timing, the yields and the flavours all hit the sweet spot. A cool, wet start to the season with a great lift of warmth throughout vintage, followed by a steady ripening period with timely rain, produced high quality fruit with great acid and flavour.

VARIETY The Huntington Estate Special Reserve Cabernet Sauvignon is the wine that consistently embodies and defines the Huntington style and philosophy. These Cabernets are supremely ageworthy, varietal and expressive of the terroir, displaying exceptional tannins and palate while offering extraordinarily good value.

VINEYARD / WINEMAKING 10% of the juice was drained off to concentrate flavours, and the remainder was fermented in stainless steel on skins for 12 days, then post-fermentation soaked for 1 week. The wine was racked to French Oak barriques on 22nd May, 25% new, the remainder 5 and 7 year old barrels.  The wine was bottled 15th August 2017, and has matured in bottle in our hay bale walled cellar for 4 years.

TASTING NOTE A rich, complex, and intense but balanced wine with beautiful texture and tannins. Primary fruit characters lead the way with black and red fruits including blackberries, red currants, red plums, and hint of a floral note. An attractive savoury, umami character with some dried herbs supports the fruit. Mouth covering and filling, very smooth and silky tannins. Lovely mid palate and a lingering finish.
