2016 Huntington Estate Cabernet Sauvignon
Balanced, weighty and varietal.
VINTAGE 2016 had a cool, wet start to the season with a great lift of warmth throughout vintage. A steady ripening period with timely rain produced high quality fruit with great acid and flavour.
VARIETY Huntington’s reputation was built on Cabernet Sauvignon. Two Blocks were planted at opposite ends of the vineyard in 1969, one (Block 3) at the highest point, the other (Block 9) at the lowest. The terroir (climate, soils) and winemaking at Huntington is perfect for this late-ripening, tannic grape.
VINEYARD / WINEMAKING Fruit from Block 9 was picked at 14.6 Baume on 3rd March; cold-soaked for 2 days and then fermented on skins for 2 weeks. The wine was racked into 12% new French oak barriques and hogsheads, with the remainder 2nd use and a few well-seasoned barriques, all French oak.
IN NOSE Crushed herbs, blackcurrant, cedar and fennel.
IN MOUTH Blackberries, cherry, herbs & dark chocolate. Fine grained but grippy tannins, fresh acidity and a medium weight body.
