2015 Huntington Estate Special Reserve Cabernet Sauvignon

VINTAGE The 2015 vintage in Mudgee was a return to more ‘normal’ conditions, warm but not too hot, dry but not drought and with timely rain. Cool evenings resulted in a good ripening period.
VARIETY Huntington’s reputation was built on Cabernet Sauvignon. Two Blocks were planted at opposite ends of the vineyard in 1969, one (Block 3) at the highest point, the other (Block 9) at the lowest. The terroir (climate, soils) and winemaking at Huntington is perfect for this late-ripening, tannic grape.
VINEYARD / WINEMAKING Small, crunchy berries from Block 9B (full-bodied, bigger tannin structure and flavour vs the Block 3 fruit with more elegant and softer tannin structure) picked at dawn on the 4th March (early for Cabernet) at 13.9 Baumé. 7 days fermenting on skins under strict temperature control to preserve fruit and slow the process down. Blended with 20% from Block 9A , put into 35% new French Oak (St Martin) for 18 months.
IN NOSE A beguiling and classic combination of blackcurrant and cedar with hints of liquorice, 5-spice and herbs.
IN MOUTH full of flavour with dark fruit, cedar and herbaceous notes. Great balance with very fine earthy tannins and a very long finish. A serious cabernet.
