2015 Huntington Estate Block 3 Cabernet Sauvignon
Elegant and varietal with superfine tannins.
VINTAGE The 2015 vintage in Mudgee was a return to more ‘normal’ conditions, warm but not too hot, dry but not drought and with timely rain. Cool evenings resulted in a good ripening period which especially favoured the Cabernets.
VARIETY Huntington’s reputation was built on Cabernet Sauvignon, and the 50 year old vines of Block 3 produce some of the finest cabernet in NSW. Situated at the highest point of the vineyard, with lean soils of gravel over sand, the fruit is elegant, finely structured and herbaceous.
WINEMAKING We decided to skip the 2014 and will release it later this year as a Bin No of the White Label range. That’ll be a whole lot of Cabernet for the money, as it is a lovely wine, but it doesn’t quite meet our strict style parameters and ambitions for the Block 3. Just 200 cases were made of this very special wine, our 9th release, and in my view the best expression of the style since the Trophy-Winning 2011. Fruit from Block 3, our best Cabernet on the vineyard – planted on the highest slope and with the leanest soils was picked on 24th February at 13.5 Baume, fermented on skins in an open oak fermenter for 11 days and racked into French oak barriques and hogsheads for 20 months.
IN NOSE Varietal, elegant and complex, a well integrated nose. Black and red fruit in the foreground, supported by fine herbaceous notes with a hint of pepper and dark chocolate in the background.
IN MOUTH Medium to full-bodied with a stunning palate. It is smooth, elegant, refined and restrained without being austere. It is balanced, long and delicious.

96/100 "Crushed into small wooded fermenters, half pressed after 2 weeks, the other half after 4 weeks, then 18 months in French oak (33% new). 91/100 "Deep brick-red colour with tawny tints, and a vanilla, caramel, milk chocolate and peppermint bouquet overlying some leafy herbal cabernet-like nuances. Zesty redcurranty acidity enlivens a chunky, full-bodied palate, which has ample tannins that dry the finish. The acid is little strident, and there are some greener cabernet notes.
