2016 Huntington Estate Shiraz Cabernet Sauvignon

AUD $27.00 inc. gst

Complex, intense, fruity.

VINTAGE 2016 had a cool, wet start to the season with a great lift of warmth throughout vintage. A steady ripening period with timely rain produced high quality fruit with great acid and flavour. It was an outstanding vintage, very similar to our excellent 2009 season.

VARIETY This classic Australian blend has a long and illustrious history here at Huntington - we've had some trophy winners in our time. Cabernet provides structure, line and length while the Shiraz smoothes, softens and fills out the mid-palate, creating a wine of superb balance. We are very committed to this blend and will be regularly releasing.

WINEMAKING Estate grown fruit from our low-yielding vines (60% Cabernet Sauvignon, 40% Shiraz) spent 1 week on skins with a portion in barrels for malolactic fermentation. The remainder was sent to barrels (20% new French and American). 18 months maturation prior to bottling.

IN NOSE Jammy, succulent black and red currant with hints of spice and cedary oak. Vibrant, supple and bursting with fruit.

IN MOUTH The fine grained but grippy tannins and fresh natural acidity mean it’s soft and smooth with a long, tight finish. The plummy, bright fruit is subtly enhanced with a hint of vanillin oak and crushed herb and there are layers of complexity beneath the fruit that will keep you coming back for more.

CELLAR 2032+

DRINK WITH Slow cooked lamb shoulder.

TOP GOLD Mudgee Wine Show 2017

"94/100  A blend borne of regional savvy across the country, this fires on all cylinders provided by the varietal synergy: shiraz's gushing exuberance and cabernet's stiff upper lipped line of detailed tannins and brighter acidity. The oak is judiciously applied as an adjunct rather than gloss. Coffee bean, currant, bitter chocolate and dried sage, peter across the long finish." Halliday, 2018

"91/100  ... it's bursting with plums,  dark fruits and berries, charcoal, black olives, dried Mediterranean herbs and even a sneaky bay leaf touch. Raspberry slides in with more time in the glass. This received the trophy at the 2017 Mudgee Show for Best Classic Blend. The mouth is coated generously yet consistently with puckering and sapping tannins the parting gift. Gimme lamb and lots of it. Good buying too. Drink now to eight years." QWine, 2018

"89/100  Deep, rich red/purple colour with a ripe, rich earthy, vanilla, lactic and ripe dark-fruit bouquet. The palate is full-bodied and loaded with tannin, the wine is rustic and stolid, finishing with plenty of chew and not a lot of elegance. It would reward some cellaring". Huon Hooke, 2018
