2016 Huntington Estate Shiraz Cabernet Sauvignon
Complex, intense, fruity.
VINTAGE 2016 had a cool, wet start to the season with a great lift of warmth throughout vintage. A steady ripening period with timely rain produced high quality fruit with great acid and flavour. It was an outstanding vintage, very similar to our excellent 2009 season.
VARIETY This classic Australian blend has a long and illustrious history here at Huntington - we've had some trophy winners in our time. Cabernet provides structure, line and length while the Shiraz smoothes, softens and fills out the mid-palate, creating a wine of superb balance. We are very committed to this blend and will be regularly releasing.
WINEMAKING Estate grown fruit from our low-yielding vines (60% Cabernet Sauvignon, 40% Shiraz) spent 1 week on skins with a portion in barrels for malolactic fermentation. The remainder was sent to barrels (20% new French and American). 18 months maturation prior to bottling.
IN NOSE Jammy, succulent black and red currant with hints of spice and cedary oak. Vibrant, supple and bursting with fruit.
IN MOUTH The fine grained but grippy tannins and fresh natural acidity mean it’s soft and smooth with a long, tight finish. The plummy, bright fruit is subtly enhanced with a hint of vanillin oak and crushed herb and there are layers of complexity beneath the fruit that will keep you coming back for more.
DRINK WITH Slow cooked lamb shoulder.
